In the same non-stick skillet, saute the reserved mushroom stems, onion, celery, and green onion in the remaining olive oil, for 5 minutes to soften. Add the crumbled tofu, garlic, and thyme, and saute an additional 2-3 minutes or until the vegetables are tender. Remove the skillet from the heat, add the remaining ingredients, stir well to combine, and season to taste with salt and freshly ground black pepper. Fill the mushroom caps with warm filling, slightly mounding the tops, and place them in the prepared baking dish. Bake at 350 degrees for 10-15 minutes or until the mushroom caps are heated through and slightly browned on top. Cream of tartar&lt;/li&gt;&lt;/ul&gt;&lt;span style="color: rgb(102, 102, 102);"&gt;Directions:&lt;/span&gt; &lt;span style="color: rgb(102, 102, 102);"&gt;Cream sugar and butter.                &lt;p&gt;Recipe By: Joanne Hush, Classic Chinese Cooking, pg 186;&lt;br /&gt;               Serving Size: 60 Preparation Time :0:45                &lt;/p&gt;&lt;ul&gt;&lt;li&gt;10 ounces fresh spinach &lt;/li&gt;&lt;li&gt;1 tablespoon peanut oil &lt;/li&gt;&lt;li&gt;1 garlic cloves -- minced &lt;/li&gt;&lt;li&gt;1/4 cup onion -- minced &lt;/li&gt;&lt;li&gt;10 water chestnuts, minced -- rinsed drained &lt;/li&gt;&lt;li&gt;1 pound won-ton wrappers (about 60) &lt;/li&gt;&lt;li&gt;salt &amp; pepper -- to taste &lt;/li&gt;&lt;/ul&gt;               Wash the spinach thoroughly and trim any tough stems.&lt;br /&gt;             Drain, then dry with paper towels or a salad spinner.&lt;br /&gt;             Coarsely chop and set aside.                &lt;p&gt; Place a wok over medium-high heat.&lt;br /&gt;               When it begins to smoke, add the peanut oil, then the garlic and                  onion.&lt;br /&gt;               Stir-fry 30 seconds.&lt;br /&gt;               Add the spinach and water chestnuts and stir fry until the spinach                  is dry, about 3 minutes.&lt;br /&gt;               Transfer the vegetables to a bowl and season with salt and pepper.                &lt;/p&gt;&lt;p&gt; When the filling has cooled slightly, form the won tons.&lt;br /&gt;               Dip you fingers in warm water and moisten the entire surface of                  a wrapper.&lt;br /&gt;               Place 1 teaspoon of filling in the center of the wrapper and fold                  it in half. (see pictures)&lt;br /&gt;               Press the edges to seal.&lt;br /&gt;               Bring the ends together and moisten with water; press to seal.&lt;br /&gt;               Cover and set aside the finished won tons while shaping the remainder.                &lt;/p&gt;&lt;p&gt; Cook the won tons following the directions in the recipe - either                  in boiling water or soup stock until they are just tender, or                  deep-fry them in 3 to 4 cups of peanut oil until golden brown,                  about 3 minutes on each side.                &lt;/p&gt;&lt;p&gt; NOTES : Makes 60 won tons.&lt;br /&gt;               Won tons may be frozen after being shaped.&lt;br /&gt;               Place on cookie sheet with sides not touching in the freezer.&lt;br /&gt;               When completely frozen place in plastic air tight bag.&lt;br /&gt;&lt;/p&gt;&lt;p&gt;These are great to have in the freezer on hand for an impromptu Chinese night at home with friends.&lt;br /&gt;&lt;/p&gt;&lt;p&gt;*************************************************************************************&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Last night, we went to a par-tey where we all were assigned different tasks in putting together a full-scale Chinese spread. It's good!&lt;br /&gt;&lt;br /&gt;Simply fry the tofu and chopped onion in the desired amount of butter and olive oil (or try a vegan margarine if you're so inclined) and sprinkle on the spices as desired.  I would guess that I fried this in my cast iron skillet at a medium-high heat for 8-11 minutes.  I &lt;font class="blsp-spelling-corrected" id="SPELLING_ERROR_0"&gt;personally&lt;/font&gt; like my tofu to have a nice crisp &lt;font class="blsp-spelling-corrected" id="SPELLING_ERROR_1"&gt;brownness&lt;/font&gt; to it, but if you like lightly toasted better, fry for less time.&lt;br /&gt;That's it. Mix well and set aside.&lt;/li&gt;&lt;li&gt;In a large bowl, mix sugar and &lt;a href="http://fooddownunder.com/cgi-bin/g.cgi?g=1626&amp;amp;r=169665"&gt;butter&lt;/a&gt; with an electric mixer set at medium speed. Scrape down sides of the bowl. This recipe was not one of the cookie recipes that Deb passed out to us to make, but I had extras left-over from our Thursday night Bible study, so I brought them to the retreat and I think they lasted all of 10 minutes (you guys are animals- ha ha).  The recipe is so easy and they're quite addicting, so BEWARE!&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold; color: rgb(153, 0, 0);"&gt;PEANUT BUTTER BALLS&lt;br /&gt;&lt;/span&gt;&lt;ul&gt;&lt;li&gt;&lt;span style="font-weight: bold; color: rgb(153, 0, 0);"&gt;&lt;span style="font-weight: bold;"&gt;&lt;span style="font-weight: bold;"&gt;&lt;span style="font-weight: bold;"&gt;1&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;span style="color: rgb(153, 0, 0);"&gt; 1/4 cups graham cracker crumbs&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span style="color: rgb(153, 0, 0);"&gt;1/4 cup granulated sugar&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span style="color: rgb(153, 0, 0);"&gt;1/2 cup peanut butter&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span style="color: rgb(153, 0, 0);"&gt;1/2 tsp. cinnamon&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span style="color: rgb(153, 0, 0);"&gt;1/3 cup light corn syrup&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span style="color: rgb(153, 0, 0);"&gt;small bowl powdered sugar (for rolling them in)&lt;/span&gt;&lt;/li&gt;&lt;/ul&gt;&lt;span style="color: rgb(153, 0, 0);"&gt;Combine crumbs, sugar and cinnamon in a bowl.  Blend well with a spoon, then blend in peanut butter and corn syrup to form dough (you may want to slightly soften the PB in the microwave for easier stirring).  Moisten hands and roll into 1/2 inch balls.  Roll in powdered sugar.  Chill on waxed paper.&lt;br /&gt;*************************************************************************************&lt;br /&gt;&lt;span style="color: rgb(0, 0, 0);"&gt;The balls will look like the picture above before you roll  them in the powdered sugar.  The sugar is optional.  If you want to increase the nutritional value of your balls, try using &lt;a href="http://www.smartbalance.com/omega3.html#"&gt; Smart Balance peanut butter&lt;/a&gt; , it has 1300 mg of Omega-6 and 1000 mg of Omega-3 fatty acids per 2 TBSP. For the Christians out there, I will warn you that the first chapter is all about 'evolutionary history', but after that, there is little mention of &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_2"&gt;EVILution&lt;/span&gt; (ha ha).  I read the evolution chapter, BTW, and while I didn't agree with it at all, it was interesting.&lt;br /&gt;WHAT does this all have to do with recipes??  Here are two recipes that were in the book:&lt;br /&gt;&lt;br /&gt;&lt;span style="color: rgb(51, 0, 0);"&gt;PLACENTA COCKTAIL&lt;/span&gt;&lt;br /&gt;1/4 raw placenta&lt;br /&gt;8 ounces V-8 juice&lt;br /&gt;2 ice cubes&lt;br /&gt;1/2 carrot&lt;br /&gt;blend for 10 seconds at high speed&lt;br /&gt;&lt;br /&gt;&lt;span style="color: rgb(51, 0, 0);"&gt;PLACENTA PIZZA TOPPING&lt;/span&gt;&lt;br /&gt;Grind placenta.&lt;br /&gt;Saute in 2 TBSP olive oil w/ 4 garlic cloves&lt;br /&gt;Add: 1/4 tsp fennel, 1/4 tsp pepper, 1/4 tsp paprika, 1/4 tsp salt, 1/2 tsp minced onion, 1/2 tsp &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_3"&gt;oregano&lt;/span&gt;, 1/4 tsp thyme, and 1/4 cup wine (I'm guessing red).&lt;br /&gt;Allow to stand 30 minutes, then add to pizza.&lt;br /&gt;&lt;br /&gt;These recipes were obtained by the author from &lt;span style="font-style: italic;"&gt;Mothering &lt;/span&gt;magazine.  Apparently, this practice is not as uncommon as one might suppose, and some people theorize that it gives many additional nutritional benefits to the mother and brand new baby. I've been going to Curves for about 9 months now, and to my surprise, I really like it.  Anyways, this recipe is from their recipe section of the Curves book.  If you have an aversion to &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_0"&gt;Splenda&lt;/span&gt;, try another sugary tasting thing, I'm sure any would work.&lt;br /&gt;&lt;br /&gt;12 ounces silken tofu&lt;br /&gt;1/2 cups semi-sweet chocolate chips&lt;br /&gt;1 1/2 ounces unsweetened chocolate&lt;br /&gt;1/2 cup granular &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_1"&gt;splenda&lt;/span&gt;&lt;br /&gt;1/4 cup water&lt;br /&gt;3 egg whites&lt;br /&gt;1/4 tsp. salt&lt;br /&gt;2 TBSP heavy cream&lt;br /&gt;1 tsp. vanilla extract&lt;br /&gt;&lt;br /&gt;Drain tofu.  Place chocolate chips and unsweetened chocolate in a microwave safe bowl.  Cover and microwave for 1 minute, or until melted. (Note from me: obviously, you can melt chocolate on the stove-top, too!)  Stir well and set aside.  Combine &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_2"&gt;splenda&lt;/span&gt; and water in a small saucepan and bring to a boil.  Turn off heat.&lt;br /&gt;In a medium bowl, beat egg whites and salt on high speed until stiff peaks form (sorry vegans, there is no substitute for egg whites that I know of).  Continue beating on high and pour hot &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_3"&gt;splenda&lt;/span&gt; syrup very slowly into beaten egg whites.  Set meringue aside.  Beat tofu, melted chocolate, heavy cream, and vanilla together until very smooth.  Beat in half of meringue.&lt;br /&gt;Fold in remaining meringue.&lt;br /&gt;Line 8 cupcake pan wells with paper cupcake liners.  Spoon approximately 1/4 of the mousse into each and pack down well.  Cover with plastic wrap and freeze for about 1 hour.  Remove from cupcake pan and put into a freezer bag.  Store in the freezer until ready to serve. PHILADELPHIA Cream Cheese, softened&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span id="_ctl0__ctl0_lblIngredients"&gt;1 tsp.  vanilla&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span id="_ctl0__ctl0_lblIngredients"&gt;1 jar (7 oz.) When vegetables are crisp-tender, stir in peas, corn and seasonings. It makes a great side dish, but I have had it as a main dish, too.  My 11 year old even likes it, and he claims to not like vegetables! Heat to a rolling boil, turn down to a simmer.  Allow to cook until a "skin" appears on the top of the tea/milk mixture.  When the skin appears, skim it off, and turn down the stove-top to low.  Begin to filter out the tea using a scoop and small wire filter. Serve on a bed of lettuce leaves.  Makes 4 serving (approx).&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold; color: rgb(255, 0, 0);"&gt;Chicken-Grape-Walnut Salad&lt;/span&gt;&lt;br /&gt;Ingredients-&lt;br /&gt;1 cup (250 ml) skinned, cubed chicken breast (can substitute marinated, fried and cooled firm tofu)&lt;br /&gt;1/2 cup (125 ml) seedless grapes, halved&lt;br /&gt;1/2 cup (125 ml) chopped celery&lt;br /&gt;1/4 cup (60 ml) walnuts, broken&lt;br /&gt;Mayo (can use soy mayo)&lt;br /&gt;Lettuce or spinach leaves (optional to serve upon)&lt;br /&gt;Directions:&lt;br /&gt;Combine the chicken, grapes, celery and walnuts in a serving bowl, toss with mayo, and chill.  Serve on lettuce or spinach leaves as a luncheon salad.&lt;br /&gt;Variation: Try the chicken salad with bean sprouts, water chestnuts or cucumbers in place of celery, or try pineapple and sunflower seeds in place of walnuts and grapes.  Makes 2 servings.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold; color: rgb(255, 0, 0);"&gt; Cheese-Stuffed Pears&lt;/span&gt;&lt;br /&gt;Ingredients-&lt;br /&gt;2 ripe pears&lt;br /&gt;1/2 cup cottage cheese&lt;br /&gt;1 TBSP (15 ml) shredded Swiss cheese&lt;br /&gt;2 TBSP (30 ml) walnuts, chopped&lt;br /&gt;lettuce leaves (for serving)&lt;br /&gt;Directions:&lt;br /&gt;Cut the pears in half lengthwise, and remove seeds, leaving a generous cavity for the stuffing.&lt;br /&gt;Combine the cottage cheese with the Swiss cheese and walnuts. Makes 4 servings.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Desserts:&lt;br /&gt;&lt;span style="font-weight: bold; color: rgb(255, 0, 0);"&gt;Apple Delight&lt;/span&gt;&lt;br /&gt;Ingredients-&lt;br /&gt;4 cups (1 l) chopped unpeeled apples&lt;br /&gt;1/2 cup (125 ml) apple cider&lt;br /&gt;1/4 cup (60 ml) honey&lt;br /&gt;1 teaspoon vanilla extract&lt;br /&gt;1 teaspoon cinnamon&lt;br /&gt;1/8 teaspoon cloves&lt;br /&gt;1/8 teaspoon nutmeg&lt;br /&gt;1/2 cup (125 ml) whole wheat flour&lt;br /&gt;2/3 cup (150 ml) skim milk&lt;br /&gt;2 eggs, beaten&lt;br /&gt;Directions:&lt;br /&gt;In a deep oven casserole dish, toss the apples with remaining ingredients.  When thoroughly combined, place casserole in a cold oven and turn on heat to 375 F (adjust for Munchies oven).&lt;br /&gt;Remove from oven after 45-50 minutes, or when apple mixture is golden and apples are tender.  Makes 8 servings.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold; color: rgb(255, 0, 0);"&gt;Orange-Almond Cake&lt;/span&gt;&lt;br /&gt;Ingredients-&lt;br /&gt;2 large oranges, preferably seedless, naval variety&lt;br /&gt;3/4 cup (175 ml) ground almonds&lt;br /&gt;1/4 cup (60 ml) ground sunflower seeds&lt;br /&gt;1/2 cup whole wheat pastry flour (if not at Wal-Mart, try Marketplace or Food co-op)&lt;br /&gt;1 1/2 teaspoons baking soda&lt;br /&gt;3 eggs&lt;br /&gt;2 egg whites&lt;br /&gt;1/2 cup honey&lt;br /&gt;1 teaspoon vanilla extract&lt;br /&gt;Directions:&lt;br /&gt;Place the oranges in a large pot with enough water to cover.  Bring to a boil, then reduce heat and simmer 30 minutes.&lt;br /&gt;Meanwhile, in a large bowl, combine the almonds and sunflower seeds with the flour and baking soda.  (To grind your own nuts and seeds, place in a blender and process with short bursts of speed until powdery).&lt;br /&gt;In a medium bowl, beat the eggs with the additional egg whites and add the honey and vanilla extract.&lt;br /&gt;When the oranges are finished cooking, remove from water, and chop them, peel and all, removing any seeds.  Place the chopped oranges, a little at a time, in a blender and process on low speed just until finely chopped.  They should not be too smooth!  Stir the orange into the egg mixture, then combine with the dry ingredients in the large bowl.&lt;br /&gt;Place the batter in a lightly oiled 9 inch springform pan, and bake in a preheated 375F oven one hour or more, until firm.  Turn off the oven, open the door and allow to cool slowly.  Remove from oven and remove ring from springform pan.  Serve cake at room temperature or chilled.  This cake is so rich tasting that no frosting is needed.&lt;br /&gt;Note: The cake can be decorated with orange slices if desired. Serves 12.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold; color: rgb(255, 0, 0);"&gt;Frozen Banana Pops&lt;/span&gt; (for summer)&lt;br /&gt;Ingredients-&lt;br /&gt;1 small, ripe banana&lt;br /&gt;Carob (or chocolate) syrup&lt;br /&gt;Wheat germ or chopped nuts&lt;br /&gt;Directions:&lt;br /&gt;Peel banana and place on a stick.  Wrap in plastic wrap or foil and place in freezer until solid.&lt;br /&gt;Then, dip them in syrup and roll in nuts.  For quick serving, dip in the chocolate syrup that gets crunchy when it gets cold. Here's one I tried twice this week- once 'regularly', and the second time, I "veganized" it.  It turned out great both ways!&lt;br /&gt;&lt;br /&gt;APPLE COFFEE CAKE&lt;br /&gt;Ingredients:&lt;br /&gt;Struesel topping: 2/3 cup bisquick, 2/3 cup brown sugar, 1 tsp cinnamon, 1/2 tsp nutmeg, 1/4 cup butter/margarine (I use &lt;a href="http://www.earthbalance.net/product.html"&gt;Earth Balance&lt;/a&gt;  for the vegan version)&lt;br /&gt;2 cups Bisquick (Bisquick is accidentally vegan!)&lt;br /&gt;2/3 cup milk (your choice of "milk")&lt;br /&gt;3 Tbsp sugar (again, your choice)&lt;br /&gt;1 Large egg (or use equivalent of &lt;a href="https://secure17.nexternal.com/shared/StoreFront/default.asp?CS=vegane&amp;BusType=BtoC&amp;amp;Count1=486995875&amp;Count2=404136300&amp;amp;ProductID=304&amp;Target=products.asp"&gt;Ener-g-egg replacer&lt;/a&gt; )&lt;br /&gt;2 Medium cooking apples, peeled and thinly sliced&lt;br /&gt;2 Tbsp chopped nuts (optional)&lt;br /&gt;GLAZE: 1/2 cup powdered sugar and 2-3 tsp milk&lt;br /&gt;&lt;br /&gt;Method:&lt;br /&gt;1) Heat oven to 400. Grease bottom and sides of 9x9x2 inch square pan.&lt;br /&gt;2) Make struesel topping, set aside.&lt;br /&gt;3) Stir Bisquick, milk, sugar, and egg until blended, beat vigerously for 30 seconds.  Spread 1/2 the batter in the pan.  Arrange apple slices on batter, sprinkle with half the topping.
